Pasteurization?
Temperature ranges between 180 to 205 degrees fahrenheit for minutes. About 99% of all commercially processed liquid juices have been 'heat" pasteurized.Research show that fruit and vegetable juices that have been heated to 117 degrees fahrenheit for even 3 minutes have had most of their essential enzymes literally killed or devitalized.
Flash Pasteurization?
Temperatures used for this method is usually 400 degree fahrenheit for 6 to 30 seconds. In fact, flash pasteurization is so extreme, that it forces manufacturers to cold filter their bottles to prevent explosion and to stop these heat pasteurized juices from continuing to cook after reaching such high temperatures.
Freeze Dried - Drum Dried - Spray Dried?
Most fruits and vegetable powders use one of these processes. The fact remains however, that these still involve 'heat' exceeding 115 degrees fahrenheit. Some juice companies proclaim that they "flash dry" their products. Basically, this is just another name for freeze drying, in which a frozen block of fruit / vegetable puree is heated at average temperature of 135 degrees fahrenheit for 72 hours until it has dried.
